덜 맵게 or 안 맵게? Two Korean Requests to Practise Before Ordering

Illustrated food bowl and speech bubbles contrasting 덜 맵게 with 안 맵게

덜 맵게 해 주세요 asks for a dish to be less spicy. 안 맵게 해 주세요 asks for it not to be spicy. The useful first question is whether the kitchen can change the dish at all: 덜 맵게 할 수 있어요?

These phrases help express a taste preference. They do not establish allergy safety, ingredients or whether a prepared sauce can be changed.

1. Read the difference in one word

덜 means “less” in the Korean Basic Dictionary. In 덜 맵게, it reduces the degree of spiciness rather than removing the property completely. 안 adds a negative meaning: 안 맵게 asks for a non-spicy preparation.

The base adjective is 맵다. In a common polite statement it becomes 매워요: “It is spicy.” Notice the spelling change; 맵어요 is not the form to memorise here. HRD Korea’s official self-study textbook presents this adjective as an example of the ㅂ irregular pattern.

2. Ask what is possible before making the request

A request describes what you would like; it does not prove that the dish is made to order. A sauce may already be prepared. Ask whether the kitchen can adjust the dish, listen to the answer and be ready to choose something else.

You can point to the menu item and ask “이거 덜 맵게 할 수 있어요?”—“Can this be made less spicy?” If the answer is no, a useful next question is “안 매운 음식 있어요?”—“Do you have a dish that isn’t spicy?” These are practice sentences, not a transcript from a real restaurant.

For an ingredient concern, ask a separate ingredient question. Do not replace a precise allergy explanation with a request for less chili.

3. Practise a short two-choice dialogue

Guest: 이거 매워요? (Is this spicy?)
Staff: 네, 매워요. (Yes, it is.)
Guest: 덜 맵게 할 수 있어요? (Can you make it less spicy?)

Now practise two endings. If an adjustment is possible, use “그럼 덜 맵게 해 주세요.” If it is not possible, ask “안 매운 음식 있어요?” The goal is to respond to the situation rather than say the longest memorised sentence.

First practise the question while pointing to a printed practice menu. Then cover the English and choose the Korean phrase for either “less spicy” or “not spicy.” Change the menu item so you are learning a pattern rather than one fixed order.

4. Keep the request separate from guarantees

Does 덜 맵게 mean there will be no chili?

No. It is a request for less spiciness. Ask about ingredients independently if that matters.

Can I say 안 매워요? instead?

안 매워요? can ask “Is it not spicy?” The request form 안 맵게 해 주세요 asks someone to prepare it that way. The context and sentence ending matter.
